Beefburger lunch
Okay, this may be a bit of a cheat recipe as I haven’t made the beefburgers myself, why would you when the butcher makes them so much better than you could?!
So, as I am not working at the moment, it usually falls on me to make some lunch. We have had all the usual lunches, sandwiches and wraps, etc, so I thought I would try something different.
Martin is lucky really as, when I was at school, my mum used to make me Fry’s cream chocolate sandwiches!
Yes, that’s right, she used to slice them up and put them in a sandwich! My Dad liked them as well… that was before I went to the grammar school annex. My gran used to live on the corner of the road to the annex, so at lunch times my friends and I used to go to her flat. Our lunches used to consist mainly of chocolate and fizzy pop! She used to have a drawer in her kitchen dresser, which always had tubes of Smarties and lemon sherbet dips plus loads of other things. In the winter, we were allowed to toast bread and crumpets on her fire and then just eat them with butter. Lovely memories.
After I left school, I went to work for a bank in the square. You remember those, it had people behind a counter and you could pay money in and take money out and have a conversation with a person, rather than a robot on the phone!
I used to go to my grandma’s at lunch time. She used to cook me a full dinner and then, when I got home, my mum used to cook me a full dinner as well. As I didn’t want to upset either of them, I used to eat both!! When my clothes got tighter, I had to stop eating two meals!! I would choose which meal to eat depending on who was cooking my favourites!
So, my lunch time snack for Martin went down very well, he preferred the bread to a roll as he thinks a roll is too big! The halloumi fries were there to bulk it out a bit, and who doesn’t like squeaky cheese with their meal
Ingredients
Bread
2 beefburgers (I recommend those from Oakley Butchers!)
Cheese
Halloumi
Method
Using a cookie cutter, cut the bread into a round the same size as the burger
Gently fry the burgers until cooked through
Put cheese slices on one side of the bread, add sauce to taste
Cut the Halloumi into thick slices and cut to make them look like chips.
Then shallow fry until brown.
