Cooking… Strawberry Cheesecake with Martha Legg

As I think I have mentioned before, we started another diet so we could look skinny on holiday! (Some chance!)
The trouble is, Martin has no will power when it comes to desserts and he leads me off the straight and narrow!
He suggested that I make a cheesecake, purely for my column as he thinks I have written too much about dinners! (I think that was just a ruse so that he can have a dessert!)
So, I looked through my recipe book and found the easiest one to do. I like this recipe as you don’t have to bake it and it is reasonably cheap to make.
I used strawberries in this, but you could use other fruit… whatever takes your fancy really. It’s ideal to use with wonky fruit as it doesn’t make any different if the fruit is not perfect. The cream cheese and cream make it very creamy, well it would wouldn’t it?
But they also hold it together. You could add chocolate as well, just to make it a bit more indulgent.
I guess I should have made it for the Queen’s Jubilee, but we were a Jubilee-free household. Well, we did watch the concert, which we thought was epic. I did feel a bit sorry for the royal youngsters as they probably have no idea who the group Queen are or Rod Stewart for that matter! And I loved the drone corgis!
Martin was glad when it was all over. My dad, who is 97 bless him, when I asked if he wanted to go to the service in the Minster, said that he would give it a miss, and go to the next one! I admire his optimism!
It was nice to see all the street parties and the celebrations. I remember the silver jubilee and my gran making a union jack hat for their street party. She was a confirmed royalist as is my dad.
So, I hope you enjoy this summer dessert as much as Martin did!

Ingredients:
250 grm digestive biscuits crushed
100grm butter melted
Tsp vanilla essence
600grms soft cream cheese
100grms icing sugar
300ml double cream
400 grms strawberries chopped

Method:
Melt the butter add the crushed digestive biscuits mixing together
Put the mixture in an 8” diameter baking tin, leave to chill in the fridge
Put the cream cheese, icing sugar (sifted) and vanilla essence into a bowl and beat with an electric mixer until smooth
Add the cream and continue beating until the mixture thickens
Fold in the chopped strawberries and spoon over the base.
Chill in the fridge until it’s needed or until you have eaten it all!
